Get into the Christmas spirit with these festive cookies.
It’s beginning to look a lot like Christmas! One of my favourite things to do during this magical season is – you guessed it! – baking. I always love to have tasty treats to give to friends and family. Here is the recipe for one of my favourite Christmas cookies, featuring a festive pecan crunch. They’re so delicious, they will melt in your mouth! Yields 24 cookies, but trust me, they won’t last long!
Pecan Tassies
Makes 24 cookies.
- ½ cup butter, softened
- 3 ounces of cream cheese, softened
- 1 cup all purpose flour
- 1 egg, lightly beaten
- ¾ cup packed brown sugar
- 1 Tbsp melted butter
- ½ cup coarsely chopped pecans
- Powdered sugar
Preheat oven to 325°F.
For pastry:
In a medium bowl, beat together butter, cream cheese until combined.
Stir in flour. Press 1 rounded teaspoon of the pastry evenly onto the bottoms and up the sides of 24 ungreased 1 ¾” muffin cups.
For pecan filling:
In a small bowl, combine egg, brown sugar and melted butter. Stir in pecans. Spoon about 1 heaping teaspoon filling into each pastry-lined muffin cup.
Bake for 25-30 minutes or until pastry is golden brown and filling is puffed. Cool slightly in pan on a wire rack. Carefully remove from muffin cups; cool completely on wire rack. If desired, sprinkle cookies with powdered sugar.
