This pineapple whip is one of my favourite desserts to serve during the Summer months. The best part is, it’s sugar and dairy free! Plus, you don’t need to turn on the oven.

1 fresh pineapple, peeled, cored and cut into chunks then frozen

1-2 c coconut milk

Place chunks of pineapple and coconut milk in food processor or high powered blender. Blend until consistency becomes creamy. You will need to push the pineapple down to get well blended. Makes 3-4 servings.
