Paleo Salmon Patties

  • 1 lb salmon, cooked (I cheat with canned salmon!)
  • 1.3 c olive oil, divided
  • 1 medium onion, finely diced
  • 1 red bell pepper, finely diced
  • 2 garlic cloves, minced
  • ½ c almond flour
  • 2 large eggs, beaten
  • 2 Tbsp mayonnaise
  • 1 Tbsp Dijon mustard
  • 1/3 c fresh parsley, finely chopped
  • 2 Tbsp fresh dill, finely chopped
  • Salt and pepper

Add 1 Tbsp oil in a large pan and saute onion and pepper until translucent. Let cool. In a large bowl, flake salmon. Add the rest of the ingredients and combine. Form into small patties. Heat 2 Tbsp oil over medium heat and cook 3-4 minutes per side. Put patties on a paper towel-lined plate.

Make Mayonnaise: 

  • 1 c mayonnaise
  • 2 Tbsp fresh dill, finely chopped
  • ½ lemon, zest and juice
  • Salt and pepper

Combine above and serve with salmon patties on a bed of arugula.
