When it’s time to remodel the kitchen, the choice of countertop is always one that leaves most people struggling to make the best decision. Two popular choices in Vancouver are quartz and granite, and there are plusses and minuses to both. Before I take a look at these different materials, remember that the choice between quartz and granite, in the end, comes down to you. Which one do you like the best and which one fits your budget the best? There really isn’t a bad choice when it’s your preference. Both quartz and granite are very strong but are not indestructible. The quartz countertop is stain resistant and does not require sealing, while the granite countertop must be resealed every year. If you don’t seal the stone, it can be stained by different liquids. Get into the Christmas spirit with these festive cookies. It’s beginning to look a lot like Christmas! One of my favourite things to do during this magical season is – you guessed it! –  baking. I always love to have tasty treats to give to friends and family. Here is the recipe for one of my favourite Christmas cookies, featuring a festive pecan crunch. They’re so delicious, they will melt in your mouth! Yields 24 cookies, but trust me, they won’t last long!  Pecan Tassies Makes 24 cookies. ½ cup butter, softened 3 ounces of cream cheese, softened 1 cup all purpose flour 1 egg, lightly beaten ¾ cup packed brown sugar 1 Tbsp melted butter ½ cup coarsely chopped pecans Powdered sugar Preheat oven to 325°F. For pastry:  In a medium bowl, beat together butter, cream cheese until combined. Stir in flour. Press 1 rounded teaspoon of the pastry evenly onto the bottoms and up the sides of 24 ungreased 1 ¾” muffin cups. For pecan filling: In a small bowl, combine egg, brown sugar and melted butter. Stir in pecans. Spoon about 1 heaping teaspoon filling into each pastry-lined muffin cup. Bake for 25-30 minutes or until pastry is golden brown and filling is puffed. One Skillet Chicken with Lemon Garlic Cream Sauce

The perfect family meal for those busy weeknights! One Skillet Chicken with Lemon Garlic Cream Sauce (Adapted from Little Spice Jar) Serves 4-5 4 boneless, skinless chicken breasts Salt and pepper 1 ½ cup chicken broth 3 Tbsp lemon juice 1 ½ Tbsp minced garlic 1 tsp red pepper flakes 1 ½ Tbsp olive oil ½ cup finely chopped red onion 3 Tbsp butter ½ cup heavy cream 3 Tbsp chopped parsley (basil is also a nice alternative!) Cut chicken breasts into ½” thickness. Sprinkle salt and pepper on both sides of chicken. In a bowl, combine chicken broth, lemon juice, garlic and red pepper flakes. Preheat oven to 375°F. Heat olive oil in large, oven-safe skillet over medium high heat. Add chicken and allow to brown on both sides for 2-3 minutes per side. Don’t worry if chicken isn’t fully cooked as it continues to cook in the oven. Remove chicken to plate. Reduce heat to medium and add the onion and the chicken broth mixture. Using a whisk, scrape the bottom of the pan so all the brown bits are loosened. Let sauce reduce for about 8-10 minutes or until about 1/3 cup of the sauce remains. When sauce has thickened, remove from the flame and add the butter and whisk until it melts completely. With the skillet off the flame, add the cream, whisk to combine. Place the skillet back over the flame for 30 seconds — DO NOT allow the sauce to boil. Remove from heat, add the chicken back into the pan and drizzle the sauce over the chicken. Hearty Tuscan Parmesan Grilled Veggie Foil Packs 4 zucchini, cut diagonally into 1/2 “ slices 3 each red and yellow peppers, cut into ½” strips 2 Tbsp olive oil ½ cup Kraft Seasoned Grated Parmesan Cheese Classic Italian Heat grill to medium heat. Combine veggies, oil and dressing.  Place half on each of 2 large sheets heavy duty foil. Fold to make 2 packets. Grill 10 minutes or until veggies are crisp-tender, turning and gently shaking packets after 5 minutes. Cut slits in foil to release steam before opening packets. This delicious key lime pie is the perfect finish for Verona’s Favourite Salmon and Grilled Veggie Foil Packs. It tastes just like summer! Key Lime Pie Crust: 1 ½ cups graham cracker crumbs ¼ cup sugar 1/3 cup melted butter Mix crumbs and sugar together, then add melted butter and mix. Press into 9” pie plate and refrigerate for 30 minutes. Filling: 3 cups sweetened condensed milk ½ cup sour cream ¾ cup key lime juice (freshly squeezed about 20 limes-best to buy the juice in a bottle!) 1 Tbsp grated lime zest   Preheat oven to 350°F. In a medium bowl, combine condensed mild, sour cream, lime juice and lime zest. Mix well and pour into crumb crust. So what can I share with you this summer? I pondered and then I thought about what I really love doing: organizing. Is that a bit weird? Nerdy perhaps? Either way, I love to find solutions to storage problems and isn’t that what a kitchen is all about? Storing what we need and keeping it close at hand for when we need it. So, I would like to share with you some unique storage solutions we have found. Hang on, it’s gonna be a wild ride!!! Most of the time, I find that we have more stuff than cupboard space. Stuffing lots of things in drawers and cupboards is really not the best solution-we still need to be able to find it and get it out of the cupboard without an avalanche to follow! So, obviously, we need to first establish what we need and what we can do without. I have some rules that help determine what to keep and what to let go of: Do you use it? If you have a turkey baster, but are a vegetarian, you probably don’t use it. Do you have more than one? Sometimes this is a good idea-I have two sets of measuring cups and measuring spoons because I tend to be baking or cooking a number of things at once—another weird quirk of mine! Verona’s Favourite Salmon Recipe

Serve Verona’s Favourite Salmon with Hearty Tuscan Parmesan Grilled Veggies (that you can also do on the BBQ) and a side salad and your summer meal is complete…well, once you add the Key Lime Pie for dessert! Bon appétit!   Verona’s Favourite Salmon 1 salmon fillet 3 Tbsp butter (I use unsalted) 1 ½ tsp seasoning salt 1 tsp granulated garlic 1 tsp dried dill 1 Lemon, cut into thin slices 2 cloves fresh garlic, crushed 1 tsp all purpose seasoning Preheat oven to 425°F. Create foil packet for salmon-place salmon inside packet and spread evenly the fresh garlic, then sprinkle with the dried spices. Cut butter into ¼” cubes and spread on top of salmon. Lay a few of the lemon slices on top of the salmon. Close the packet and place on cookie sheet in oven. This also works well on a BBQ by placing the packet on the grill. If possible, try using indirect heat with the BBQ. Bake for about 15-20 minutes. Check for doneness by using fork to see if salmon flakes and is no longer dark pink inside. One of our favourite Mother’s Day traditions is to enjoy Mother’s Day breakfast or brunch at home. It’s a pleasure to cook and entertain guests in our beautiful custom kitchen. Here are a couple of our family’s recipes. The watermelon salad might surprise you — but it’s an ideal treat in the hot weather we’ve been having lately. Watermelon Salad for Mother’s Day 3 ½ lbs seedless watermelon cut into 1” cubes (about 6 cups) 2 Tbsp fresh lime juice ½ cup fresh basil leaves, cut into thin strips Coarse salt and pepper 4 oz feta cheese broken into large pieces Combine watermelon, lime juice and ½ the basil. Season with salt and pepper. Divide among 4 plates. Scatter cheese and remaining basil on top. Enjoy! Mother’s Day Crepes 1 c flour 2 eggs ½ c milk ½ c water ¼ tsp salt 2 Tbsp melted butter In large mixing bowl, whisk flour and eggs. Gradually add in milk and water, stirring to combine. Add salt and butter, beat until smooth. Heat lightly oiled griddle or fry pan over med-high heat. Pour or scoop ¼ c batter into pan. Tilt pan to evenly coast surface. Cook about 2 minutes until bottom is light brown. Loosen with spatula, flip and cook other side. To assemble crepes: Spread Nutella, top with sliced bananas and fold over then top with whipped cream. Cream together 8 oz softened cream cheese with 1 ¼ cups sifted icing sugar, 1 Tbsp lemon juice, 1 tsp lemon zest and ½ tsp vanilla extract. So you’ll use outlet covers and tape down or move any electrical cords. What can you do in the kitchen and bathroom to make sure your child is safe and your home is secure? Kitchen The most dangerous things in the kitchen are cleaners and chemicals, sharp objects, and heat. Put safety latches on the lower cabinets, especially where cleaners are stored, as well as drawers that hold sharp items and pantry or closet doors. Move dangerous and poisonous items to higher shelves and cabinets. Don’t leave the dishwasher open with sharp items at baby height. Never leave a hot stove unattended and make sure any pot and pan handles can’t be grabbed and pulled over. Deep-Clean Your Kitchen without Chemicals It’s finally here! Spring! Time to come out of hibernation and enjoy the glorious spring that only happens in Canada’s balmy west coast! And there it is-the sun! We have been waiting with anxious anticipation to see it again. Shining in through the windows…the streaky, grimy windows…hmmm. Shining and showing me the spots on the counter that I missed cleaning from last night’s supper. Showing me the dust on the dark wood furniture. Showing me that the streak on the wood cabinet door is not the grain, but spaghetti sauce. It’s definitely here, spring cleaning. Not that much fanfare about that. Well, since we have to do something about it, we might as well get it done as efficiently as possible so we can get out and start filling up on Vitamin D!  Okay, we have found some time and are ready to get serious about cleaning in the kitchen. First thing you should know about me is that I hate chemicals. If you have to put on rubber gloves to protect yourself from your cleaning supplies, I just don’t want those in my house. This means I have to find products that will give me a serious clean, because I don’t love cleaning, just a clean house, without the chemicals. So, I go back to a simpler time when the cleaning products literally came from your pantry. And I found that vinegar and baking soda are quite an arsenal! So, here we go! Tips For Cleaning Granite Countertops

Granite countertops are a beautiful addition to a kitchen. But when they’re dirty, they stand out for all of the wrong reasons. Fortunately, cleaning granite is not difficult. You do not need to have any special skills. You just need to follow a few tips and your granite counter tops will look as good as new on a daily basis. First, you need to dust the countertops to remove any dirt and dust. Do not use a paper towel since it will force the dust into the corners. Instead, use a microfiber cloth. The cloth will lift and remove the dust. Then, your granite countertops are ready for a wash. Don’t use acidic cleaners such as vinegar or ammonia. The acid in those cleaners can dull the countertops. You should also avoid powdered cleaners. Instead, use water or a stone cleaner. If you have a stubborn oil-based stain, mix the water with some baking soda. If it is a water-based stain from hard water, use a bit of hydrogen peroxide in water. Finally, you can polish your countertops with Armor All. While the product is normally used for vehicles, it can restore your granite’s luster and shine. Put some Armor All on a microfiber cloth and wipe it around the countertops. Spread it evenly so the entire surface will shine. Then, wipe the Armor All off with a clean microfiber cloth. Be sure you are thorough so it does not streak. When you are finished, your countertops should look shiny and new. The cabinets are usually more demure, staying with a natural wood, a stained wood or white, black or grey (the newest colour to become popular). Granite is good for high-use areas, fairing well against hot pots, spills and knives. My only complaint against granite was that it is not food safe unless sealed. The process of sealing the granite wasn’t hard or costly, but it was required at least once a year. Granite has cracks in it-it is a piece of stone after all. Those cracks can harbour bacteria and could be transferred to your food when being prepared. Maybe I am a bit over-cautious, but I feel better knowing that my kitchen is food safe. Verona’s tips: summer 2013 trends  I was a little concerned about commenting on trends because trends usually mean something that is popular one day and unpopular or out-of-date the next. Although this usually applies to fashion, kitchens also fall victim to trends. The good news is that the trends stay longer with kitchens than wide-legged jeans! So in researching trends for 2013, I tread carefully, with a lot of consideration to our west coast lifestyle. Taking the above into consideration, there is some good news to share with you! The trends this season are towards traditional or transitional style kitchens. Traditional kitchens are easy to understand. But “transitional” kitchens refers to a traditional kitchen in its essence but with a simpler aesthetic appeal. It has cleaner lines and less decorative accents. But, in both kitchens, we at Elite like to emphasize function. Your kitchen should still be comfortable and accessible. Those things are always in trend! According to Zillow Digs Spring Trend Report, May 2013, the traditional look is very popular but the focus is on organization and storage ideas as well as islands. It always seems that there are more pots than there are cupboards. So, organization is something we take seriously!
